Tacos al Pastor, Mexico City Nights

Al pastor is a story of migration served on a tortilla. Lebanese immigrants brought the vertical spit to Puebla; Mexico made it sing with achiote, pineapple, and smoke. Tonight, in every taquería in Mexico City, the trompo still turns.

We painted this one loud — the neon of the street stand, the flash of the knife, the cilantro falling like confetti.
